Rodrigues
Blueberry Dressing
2 Tbsp Vegetable Oil
1 Tsp Garlic, finely chopped
2 Tbsp Fresh Ginger, finely chopped
2 ½ Cups Blueberries, Frozen
1 Cup Rodrigues Blueberry Wine
Juice of 1 Lemon
Juice of 1 Orange
½ Cup Red Wine Vinegar
1 Cup Vegetable Oil
1 Cup Chive Oil
Warm first amount of vegetable in medium sauce pan over medium heat,
sweat ginger and garlic, add blueberries and combine. Increase heat
to medium - high and add Rodrigues Blueberry Wine, lemon and orange
juice. Bring to a boil and let simmer until reduced by about one
third. Puree blueberry mixture until smooth and let cool.
Once the blueberry mixture has cooled add the red wine vinegar and
continue to purse while slowly adding both oils. Season with salt
and pepper, and return to refrigerator until ready to serve.
